Chaidim Dark Tea Tian Jian 2009 Loose Leaf Tea ชาเทียนเจี้ยน 2009 ใบชา

This is a Wild Tian Jian from the high mountains in Henan province, produced in 2009.  A varietal growing in the mountains of Gao Jia Shan and Yun Tai Shan for centuries. 

The taste of the tea is complex with some mineral sweetness, malty and earthy. This Loose Leaf Tea ใบชา is quite aged with almost 15 years of aging and has a deep orange-red tea soup with plenty of thick juicy sweetness.  Very nice tea experience! 

The concept behind aging tea is the same as drinking aging wine. Aging develops a nice character, soften tannins and adds additional aromas that were not present at the beginning. 

You can enjoy this tea at Chaidim Teahouse or at home with 2 brewing techniques. Either with a small teapot with 5 to 7 grams of leaves using 100 ml of 95 C water flash brews or a bigger teapot with 8 to 12 grams of leaves using 500 to 750 ml of 95 C water. The second method allows you to infuse the tea for way longer, from 10 to 30 mn, as long there is still water in the pot. The result is exquisite. We love Tian Jian Tea. You will love it too.
